UndaPot is a Maryland food service business that offers the comforts of a coffee shop to a business professional clientele seeking to balance the demands of work or school, with a thriving social or family life. It started in 2020. Borrowing from the rich flavors of world cuisine, UndaPot delivers the delightful bites of Beignet (Puff-Puff), an African street food favorite, which is a mutation of world cultures and possesses the versatility of a breakfast, lunch, and dinner meal choice. The story of Beignet is the story of Africa’s colonial past, its resilience, its ingenuity and its ability to thrive within diversity. It is a story that may be African but is really a reflection of the world. Other flavors that will take your taste buds on a journey around the globe are offered through Accra banana and a variety of pies. You are in for a treat!

The Name UNDAPOT

The name ‘UndaPot’ is derived from the Pidgin English reference to the residue of a well-cooked dish, in Africa. Thanks to gravity, all seasonings have a tendency towards settling at the bottom of the pot while cooking, creating a most tasty extract to the food prepared. This residue could become the source of many arguments or squabbles amongst youngsters (if not tactfully handled). For ‘legends’ who grew up around their mothers assisting with chores in the kitchen or cooking, the tale of kids heard negotiating who would get the “unda pot’ (Pidgin English) once cooking was done, is a memory of precious precooking encounters. Such deals would have been struck by the time the food was ready, or fights could erupt should a deal be compromised. Those were the good old days, growing up. When kids were kids and could grow up retaining their instincts to remain jovial throughout a lifetime. As you can see, the ‘under pot’ is to die for.
